Describe the idea:

Hennings is a food producing company where sustainability and quality are the two main pillars of production. The company is focused on handpicking nettles following organic regulations, drying them in temperatures between 25-42 degrees Celsius, and processing the nettles into an organic powder. Consumers are thus able to use this powder both as a condiment, as well as a focus of a dish. Hennings is aiming to expand its product range in the future.

 

Who are you? Previous education/jobs/ experiences etc.

I have lived in three different farms throughout my childhood, therefore natural and local food has always been important for me. My grandmother is my biggest inspiration for what I am doing. I am currently studying Food and Meal Science in Högskolan Kristianstad where I am able to expand my knowledge and skills regarding the sphere of gastronomy. I have experience working as a chef both in Sweden and in New Zealand.

 

What will you do during these three months? How will you spend the time?
Throughout the three months I will focus my time on marketing and selling my product to retailers and restaurants, as well as further getting my product out on the market. I will also aim to develop more recipes for the nettle powder and increase my presence on social media. Lastly, I aim to develop new products following the availability of my farms.

 

What do you expect to achieve during Leapfrogs? 

I want to create a bigger bank of recipes where my customers can easily find inspiration with my products. Being further engaged in social media with my company and taking advantage of what opportunities the internet can offer is also something I strive to do during this time. Lastly, I aim to have developed at least three new products, entirely produced on my farms in Östergötland.

Tell us what you have done on your projects so far during the Leapfrogs time:

So far in the project I have been working on my website aiming for a new and improved look as well as content. I have also updated my documentation required for my food producing company to keep running. I have also managed to get my products out to a retailer in Lund. From Saturday the 30th I have been in Östergötland where all the wild food is growing. So far, I have been picking 50 liters of cherries and I have scouted around in the forest for other berries to pick.

 

Has everything gone according to the plan? Has anything unexpected occurred? Has something been easier/harder than expected? 

With this extreme drought I have had a very hard time to find the berries I planned to pick. It has been very hard to find good spots with blueberries in the forest, but I think I will manage to pick a few liters of blueberries, much less than I first expected to pick. I think it’s been much harder to find interested restaurants and retailers for my products than I expected, but the ones I found have all been very positive.

 

What will you focus on during the remaining time? Will you follow your original plan or has anything changed along the way?

I will start focusing on creating new recipes with my new as well as old products. I will also try to find more retailers and restaurants both in Östergötland and in Skåne. I will continue to scout for more places where food is growing and pick them as soon as they are ready. I will continue my level of interaction on social media and make sure that people can easily find the company’s activity and, if interested, find out more about me and my company.

How did you experience the three months?

These three months have been busy. I have been working with many different tasks and I am extremely grateful that Leapfrogs has given me the opportunity to work with my project/company full time.  It really allowed me to develop my company and take it to the next level in terms of sales, marketing, and product development.

 

What has been hardest/most enjoyable?

The biggest problem I faced was the extreme heat and drought. It affected both me and my company as it has been a challenge to work - mentally and physically, since my job requires large amounts of outside work. It was tough working while being aware that external conditions were affecting my work beyond my control. Nevertheless, it was very rewarding to be able to develop new products with the tools I could use.

 

Did it go as expected? Will you continue working on your project in the future?

I didn’t expect the extreme drought and therefore I was not able to develop one of my planned products. Otherwise I think everything has been going very well, I have achieved more than I thought I would. I will obviously continue working with my company as far as I can see in the future.

 

What would you say is the most important lesson learnt while working on your project?

The most important lesson I learnt is that you can never be sure about certain things. I believed that this year’s growing season would beat all records because of the long winter and warm weather, however I quickly learnt that you should always have a backup plan and always be prepared to look for new methods and products you might need to use and produce because of external circumstances.

 

Do you have any tips to other ”new” entrepreneurs?

Be sure that whatever you do is what you want to put all your time and effort in. Be sure that you feel great joy when you work with your project, there is no point of doing something you are not 100% engaged in. If you are going to work with others, make sure that the person complements you and that he/she can bring new strengths and point of views to the table.
